Spanish

Spanish restaurateur Bollo's Ibiza is a favorite among New Haven foodies. Its philosophy, aiming to fuse the traditional with the modern, is accomplished with the inclusion of authentic Spanish dishes with modern twists in tastes on the menu.

This is a very good restaurant. The food was well prepared, and the service was great. The place is a bit dark, though.

Not traditional Spanish tapas, but delicious. High-quality food at very reasonable prices (for tapas).

I have been here several times (with parents, dates, with JE for Master's Tea Lunches), and it consistently treats me with absolutely incredible food, much better than Zinc or Union League. The only restaurant I have found to be on par with this one is Bespoke, which is also awesome. At Ibiza, I have had at least half the menu, if not more, and it is all absolutely delicious. The squid cooked in its own ink was just awesome on so many levels, but all the other appetizers are equally great. In terms of entrees, if you're only going once I would recommend the short rib. That being said, I have liked everything again too. The wine selection is a great list of Spanish wines (get a good rioja if you go). Finally, you MUST leave room for dessert. It is the best part. The warm chocolate cake and apple tart are both great and receive probably the most praise because they have to be ordered in advance and consequently stand out more, but the best one on the menu is actually the chocolate-almond croquettes. They are simply amazing, but be prepared to defend your plate. Five orders of chocolate cakes and one of croquettes don't lend themselves to a favorable sharing situation.
