I hoped I would love it. :-( Fantastically executed. But some of the combinations were just out "original" that they almost didn't work. The service was great, but some courses were accidentally skipped for my dining partner and I. The table next to us had a little girl with them...they were from out of town and clearly the parents wanted to try it and had to bring their daughter with them. The service was great...they toned down the menu to try to accomodate her tastes and she had the juice flight sampling. It was wonderful to see how they try to introduce the younger generation to how exquisite food can be.
Maybe I just had too many excellent meals within too short a time span (Bastide in Los Angeles on 5/2 and Charlie Trotter's on 5/24) but I wasn't blown away by it the way I was by Bastide.

At the top of list along w/ Keller ... truly exemplary for the really, really serious "foodie." The menu offers the Grand Menu and the Vegetarian Menu ...we gave the chef a challenge ... asked for a "mushroom" themed Grand Menu ... course after course of intensely flavored, complex mixes of the familiar and the unfamiliar. The crew loves to explain and discuss ... each and every morsel is carefully selected and beautifully served ... set aside three hours and bask in a gustatory experience that will linger... and figure $300 per person w/ wine.

This is a Christmastime tradition for my wife and I for as long as we live in Chicago.
The menu changes frequently. You choose between two set menus, the grand and the vegetable, and you may interchange courses if you are opposed to something.
We did our second annual dinner here on 12/20/2008 and it was an even better experience than the first one.
We ate upstairs this time and I think we liked it better than being downstairs.
We went with the grand menu again and this time I have a record of what we ate (they give you the menus afterwards, but the first year we went they said they would have Charlie autograph them for us, then mail them to us, and that never happened unfortunately, I was pretty shocked they failed to follow through, and now we have no record of what we ate that night).
The grand menu was:
Japanese Kindai Bluefin Tuna with Grapefruit and Battera Kombu
Maine Day Boat Lobster with Yellow Beets, Chestnut, and Bull's Blood
Poached Kumamoto Oysters with Pork Belly and Pickled Celery
Whole Roasted Squab with Birch, Black Trumpet Mushrooms, and Devil's Club
Roasted Four Story Hill Farm Veal Loin with Date, Cocoa Nib and Pomegranate
Satsuma with Clove and Sauternes
Honey Crisp Apples with Cider Granite and Ginger Jelly
Black Mission Figs with Shaved Fruit Cake, Marcona Almonds, and Pedro Ximenez
The wine accompaniments were:
Champagne Francoise Bedel "Entre Ciel et Terre" Brut NV
Dr. Burklin-Wolf "Wachenheimer Rechbachel" Riesling, Pfalz 2005
Meursalt Jean-Philippe Fichet 2006
Vision Cellars Pinot Noir "Garys' Vineyard" Santa Lucia Highlands 2006
John Duval "Plexus" Barossa 2006
Tokaji-Aszu "5 Puttonyos" Chateau Pazjos 1999

This was the best experience I have had at a restaurant. The wine pairings were perfect. I loved them all. Last year we did not get them and I know how much we missed out on now. It adds a very exciting element to the evening. They are each a course on their own to examine and savor.
On our first visit, after dinner, one server took us on a tour of the restaurant, including inside the kitchen. There is a table in there for anyone who wants to be as close to the action as possible.
The culinary standards are elite. We first learned of Trotter´s on our honeymoon in Cabo where we ate at Charlie´s restaurant, C. The food there is excellent also, and more a la carte oriented.
My atmosphere rating is merely to ensure this gets a full five stars. It is actually very plain with Charlie arguing that the atmosphere is provided by the person in front of you. I agree with that and also assert that the food is so good that atmosphere is completely immaterial.
If you love the best in dining, then you have to make this place happen in your schedule. There are no excuses.
