The farm's owner once served as chef de cuisine of venerable Le Bernardin and Lutece, and the quality of ingredients used at Per Se is unparalelled. Keller's flavors shine in signature dishes like "Oysters and Pearls," a "sabayon" of pearl tapioca with Island Creek oysters and caviar, served as part of the nine-course chef's tasting menu. Per Se also offers a nine-course vegetable tasting menu. Both tasting menus offer small plates, designed to wow diners and leave them wanting more. Beyond sheer quality, Per Se rounds out the dining experience with innovative preparations, an elegant space and well-informed, attentive service.

Salmon tartare cones, fresh shaved white truffles on top of risotto, butter lemon poached lobster, oysters and pearls, truffle infused custards, and kobe beef. Per Se is the epitome of food porn. It is the most obnoxious mixture of over the top ingredients with perfect execution. A true life changing experience in taste and creativity. You will never view food the same way after this dinner. A must visit for any true foodie.
